Cucumber Salad
Serves 1
Ingredients:
- 1 whole english cucumber
- 1 tbsp light mayo
- ½ cup nonfat greek yogurt
- 1 garlic clove
- ¼ cup fresh dill
- ¼ cup red onion
- 1 tbsp lemon juice
- 1 pinch of salt
Directions:
- Use a mandolin slicer to slice an english cucumber.
- Add the cucumber to a large lidded storage container or jar. (Make sure your container has an attachable lid!)
- Mince your red onion and garlic and add them to the container along with all remaining ingredients.
- Place the lid on the container and shake until all the ingredients are mixed well. Enjoy!
