Protein Pickle Dip
Servings: 6
Ingredients:
- 1 cup blended cottage cheese
- 1/2 cup plain nonfat Greek yogurt
- 1/2 cup chopped dill pickles
- 1 tbsp. or more pickle juice
- 1 tsp. lemon juice
- 1 handful chopped fresh dill
- 3 or 4 chopped chives
- Sprinkle of ranch seasoning, to taste (contains salt)
- Pinch of salt and pepper, to taste
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 cup fried onions
Instructions:
- Mix the base: In a medium bowl, stir together the blended cottage cheese and Greek yogurt until smooth.
- Add flavor: Fold in the chopped pickles, chives, dill, pickle juice, lemon juice, garlic powder, onion powder, ranch seasoning, salt, and pepper. Mix well to combine. Cover and refrigerate for at least 1 hour to allow the flavors to meld. If the dip seems too thick after chilling, stir in more pickle juice to reach your desired consistency.
- Finish and serve: Before serving, top the dip with fried onions, a few extra chopped pickles, and a sprinkle of fresh dill. Serve with your favorite raw veggies or chips.
